Gluten and other food incompatibilities

Bolland, general practitioner and doctor for naturopathic medicine affirms through years of experience what scientist have just been analysing lately: noticeably more persons than expected suffer from wheat and albumin incompatibility (Gluten) and milk protein incompatibility. Since persons do not directly recognise the connection between the disturbances with the consumption of foods containing it, it often takes 10 years and longer before an incompatibility is diagnosed.

Now there is a blood test on the market with which this illness can be easily and clearly diagnosed. Now the illness is being diagnosed more and more often. It used to be that we thought less than 1 person among a thousand was affected, these thoughts must be revised now. “We now suspect that one person among 130 to 300 persons in Europe is affected. In reality probably even more” says Detlef Schuppan, professor at the University of Erlangen. On the average women are affected twice as often as men – although we don’t know why.

A genetic connection is now considered a fact. The genes that cause this incompatibility are known. We also know that approximately a quarter of the population carries this gene, meaning more people than are genuinely suffering from gluten incompatibility, carry the gene. “Genes alone are not enough though as an explanation” says Dr. med. A. Bolland and searches on for a cause.

Nutrition seems to play an important role in the development of gluten incompatibility. When small children suffering from gluten incompatibility are fed with accordant grain foods at an early stage, they will suffer more later, reports Klaus-Michael Keller Professor at the German Diagnostic Clinic in Wiesbaden. In Sweden the gluten incompatibility doubled when more baby foods with grains were sold.

“Along with this patients must take into account a significantly higher risk of acquiring diabetes, arthritis and osteoporosis, if they do not stick to a strict diet” explains Keller. Adults with this illness have four times more often intestinal tumours than healthy persons. Fertility is also affected as long as one continues to eat wheat and grains. Dr. med. A Bolland also found a connection to other disorders in association with food incompatibilities such as migraines, depression for example.

Each meal becomes an experience for the taste buds, of course taking incompatibilities into consideration but not making them noticeable to the guest.
